Homemade Sausage for Santa

IMG_1543Sausage making happens a couple of times of year at our house. One time is after the hunt is over and another is at Christmas. The Christmas sausage is a beef stick or salami made from our own home raised lean ground beef.

We mix together
5 tsp. Morton Quick Salt
2 1/2 tsp. garlic salt
2 1/2 tsp. mustard seed
2 tsp. black pepper
1 tsp. Liquid Smoke
This is added to 5 pounds ground beef and mixed well. Then cover and refrigerate for 24 hours. Then mix again and refrigerate again for 24 hours. Form into rolls and bake at 150 degrees for 8 hours.

If I say so myself, it is really good. I am pretty sure Santa agrees.
